Chia seeds have been quite popular in recent years as they are said to be a good source of protein, fibre and antioxidants. I like adding them to my smoothie to make it healthier and to give it a fun texture. My recent favourite breakfast is Chia seed pudding; it is a fantastic breakfast option as it is healthy, tasty and super easy to make. Chia seed pudding can be put together the night before for a fuss free breakfast the next day. A perfect start to your mornings...Yum!
Serves 2
Ingredients
6 tbsp chia seeds
Handful of blueberries
Pure maple syrup
Method
Add a cup of almond milk to 2 glasses or jars.
To each add 3 tbsp of chiaseeds. Add about 2 teaspoons (or as desired) of maple syrup in each and stir.
Leave to stand for a minute. Mix well again and cover.
Leave to set in the refrigerator overnight. And ta da! the next morning you have your pudding ready to savour!
Top with some blueberries or any fruit of your choice and drizzle over some more maple syrup.
